The remarkable story of the Skybury coffee plantation begins with a grand transcontinental journey. In 1981, founders Ian and Marion MacLaughlin decided to leave Zimbabwe. They first moved to Oman, then traveled through the United Kingdom, and eventually arrived in Perth in 1987.

Seeking a fresh Australian adventure, the couple set off on motorbikes to explore the rugged coastlines and deep outback tracks of the continent. Their journey eventually led them straight to the breathtaking Atherton Tablelands. Falling in love with the fertile volcanic soils of Mareeba, they established the foundational roots of Skybury that very same year.

Today, the beautiful Paddy’s Green property is a thriving multi-generational farm. It is home to three generations of the MacLaughlin family, including Ian and Marion, two of their three children, and five of their grandchildren.

Spanning 470 acres of rich agricultural land, the estate has been carefully engineered to incorporate world-class sustainable management principles. The MacLaughlin family remains deeply committed to continuous research and development for long-term eco-friendly farming.

These advanced outback practices include strict water conservation loops, renewable solar power grids, natural erosion controls, integrated pest management, and innovative dual-cropping systems.

The family firmly believes in keeping things local. They actively hire regional workers, purchase farm goods from neighboring suppliers, and sponsor community events. Between the coffee groves, papaya orchards, and popular tourism operations, Skybury proudly employs about 90 local residents.

Today, the sprawling plantation features over 90,000 thriving trees. It successfully produces 40 tonnes of premium green coffee beans every single year, alongside over two million kilograms of sweet red papaya.

Fun fact: did you know that healthy coffee trees can live for 80 to 100 years? Because of this incredible lifespan, they are sometimes referred to as the “Centurion plant.” Their agricultural productivity typically peaks between six to eight years, before a natural production decline begins at around the ten-year mark.

When the groves enter their seasonal blossom phase, the delicate white flowers fill the entire farm with the sweet aroma of fresh jasmine. At harvest time, the ripe cherry hulls containing the inner coffee beans can actually be eaten straight from the branch—they are vibrant red, juicy, and naturally sweet.

The trees are harvested using a specialized machine that gently shakes the branches, allowing only the perfectly mature, heavy cherries to fall. During the processing stage, the cherries are routed into massive vats of water to clean, classify, and sort the yields by weight.

  • The Primary Classification: The heaviest cherries sink first and are channeled to a classifying machine where the hull splits to release the inner beans.
  • The Pulp Removal: A secondary machine strips away the remaining sticky skin and fruit pulp.
  • The Fermentation Tanks: Light, low-grade beans are skimmed off the top of the water channels, leaving the heavy, premium beans to flow into fermentation tanks to settle overnight for 24 hours before heading to the mechanical dryers.

The true mark of a masterfully extracted espresso comes down to the quality of the crema—the rich, velvety golden-brown cream that sits on top of the cup. The natural oils inside the bean indicate that the extraction pressure and grind settings have been executed correctly.

At Skybury, the team utilizes a light-to-medium roasting style. Lightly roasted beans allow the true, complex characteristics and fruity sweetness of the local bean to shine through in your cup. A dark roast burns off the delicate, natural sugars of the bean, leaving a bitter, charred profile behind.

First opened to visitors in 2006, the spectacular on-site Skybury Cafe features an active, working commercial roastery. Visitors can relax on the deck to enjoy fresh, plantation-to-table meals while taking in panoramic views across the valley.
